Recipe for kids: Healthier baked chicken fingers, not fried


Try this simple and delicious baked chicken fingers recipe, which makes a healthier alternative to the usual fried chicken. This recipe serves six.

Baked chicken fingers

18 chicken pieces, each about 4 inches long and ½-inch thick
250ml buttermilk
1 clove garlic, minced
½ onion, finely diced
Salt and pepper, to taste
2½ cups cornflakes
½ tbsp paprika salt

Low-fat ranch dressing
¼ cup low-fat mayonnaise
3 tbsp low-fat sour cream
1 tsp lemon juice
1 tsp parsley, chopped
Salt and pepper, to taste

1. Put the chicken in a large ziplock bag. Mix with buttermilk, garlic, onion, salt and pepper, and keep the sealed bag in the fridge for one hour.

2. Preheat oven to 175 deg C.

3. Add cornflakes, paprika salt and pepper to another bag and crush flakes coarsely.

4. Remove chicken from bag and bread the pieces with cornflake blend.

5. Place on a rack and into oven for 40 minutes.

6. To make the low-fat ranch dressing, put all ingredients in food process. Serve as a dip with baked chicken.
